How can I use my Atlas Wellness pasta maker to get the right width and thickness? My pasta sheet tore when I used the plastic "well" insert.

WOW, you have a great machine. Most will make sheets only 6" wide yours will make sheets 7 inches wide. The Bellemain mold is just over four inches wide. Yours would work great for making ravioli with the Kitchen Aid ravioli maker too. It requires sheets at least 6 inches wide. We have a rough time with our Kitchen Aid pasta machine maintaining 6 inch wide sheets end to end when the length goes over 18 inches. Your thinness adjustments on the Atlas is 10 stops. Most only have 8. When you make ravioli you want the dough as thin as possible. Don't forget you're making a two layered pasta. If you make the layers more than number 6 in thinness, you'll get gummy ravioli that will take forever to cook. For tender ravioli, setting six is perfect. Michael White's pasta recipe of 2 cups AP flour, 3 large eggs, 1 tablespoonful of olive oil makes perfect pasta and the most tender ravioli. He's the greatest authority on making fine pasta. You can use APF. We use the Italian 00 pasta flour, it's the best. It's a much finer flour made specifically for fantastic pasta. The Bellemain mold is the best on the market. You might want to get Manuela Zangara's book on making home made pasta. It's a great text on making home made pasta. Abebooks.com has it at a great price too. Enjoy my friend. Grampa Joe

What is the size of the ravioli this makes? From end to end? I read it is 1 inch but in the photos it looks bigger than 1 inch!

As someone wrote, they are about 1 5/8 x 1 5/8. I measured some frozen ones and they were 1 5/8 x 1 7/8, apparently they stretch a bit when taking them out of the mold. The sheet size required to cover the mold is 13 X 5 (2 required), and 1 pound of dough yields slightly fewer than 16 sheets, or 90 ravioli - depending on thickness.

Are these stainless steel?

No, they are not stainless steel. They can’t be put in the dishwasher or they will pit. Hand rinse and dry immediately or just dust off the flour with a dry towel.
