Is there a slot for paper money as well? Is there a slot for coins?

Yes there are slots for paper money and coins. I use the phone pocket for the paper and the zipper for the coin. I love this wallet, it is breaking in very nicely.

How does the top stitching look? Sometimes it can make things look tacky if it's not made well. Is this nice/classy looking?

Top stitching does not stand out and is perfectly straight. Every time I pull this wallet out of my bag, I'm so happy because it looks so nice. I think it's looks expensive and the leather is beautiful. I bought the tan and it looks so expensive. Love it!

can the extra card holder slot (in the middle) be removed?

No, it cannot be removed. It is permanently attached.

Could a samsung s7 edge fit in this wallet?

No, I do not believe so. My droid maxx doesn't fit unless it's the only thing in the wallet. Once you put credit cards & ID in it a phone won't fit.
