Can it hold thick books. books that are ~2 inches thick (like the Game of Thrones books)?

I would think so. I use it for my law school books which are very heavy and thick and the stand is extremely sturdy. I'm not completely sure how it would work with paperback but I don't foresee much difficulty

if I put a piece of plexi glass over the book (to keep recipes clean), would the clips still be able to hold that AND the book stable?

I would think so, but clips will hold book stable by itself. Glass to keep clean, should be able to hold, does hold thick books!! Wife loves it!!!

I would like to use this stand to hold my appointment book. Is this stand able to hold a appt. book and allow me to write notes and not slide?

Yes, it can definitely hold your appointment book, however, depending on what type of surface you place it on will determine if it slides. I use mine in the kitchen and I have granite cabinets so it slides a little. It’s worth the purchase though. You could probably place it in front of something solid so it won’t slide and then it would be perfect.
