Hi How storage this ? I didn’t find any information about it

I keep mine whole in the fridge. 30 mins prior to use, either thinly sluced or grated, I cut off as much as I need and put the remainder into a sealed container and keep refridgerated. Whilst it has a use by date on it I have found that it is best taken as a guide. If it hardens then it can still be grated and used with pasta.

Is it soft and moist ?! Last time purchased was solid as rock?!

All bottarga is firm. I wouldn't expect it to be soft. I finely slice it and eat it with thinly sliced garlic, olive oil and lemon. Alternatively I grate it over pasta. Either way, it is not soft nor would I say it is particularly moist. It is a taste sensation, if that doesn't sound too 'foody'. I suppose the harder it is the easier it is to slice as thin as you can.
