I was very happy to get this out of the box and onto the cutting board. It had a nice balance and held its sharp edge for the first 2 weeks. Then it required some attention. I have owned every sort of knife and was looking for a deal when i saw this one online. I was able to sharpen and hone it back to its original sharpness, then noticed it required more and more attention. It seems that the edge of the blade was disintegrating? This is something I have never seen or experienced on a kitchen knife before. My opinion is that the multi layer metals used in this blade were not properly hardened or forged (if i can use this word in this case). After 3 months of use, the edge of the blade began chipping off pieces of metal. It appears the metal used inside the blade is falling out leaving a crevasse on the edge and thus making it jagged with potted spots actually missing metal. I had such high hopes for this knife, but as they say, you get what you pay for. Lesson learned. I'll stick with my Global and Henkel blades.

料理初心者ですが、肉切り用として１本ほしいと思い切れ味の良いと評判のこちらを購入しました。今使っているのは、ニトリで買った関孫六の三徳なのですが、これに比べると刃の薄さにびっくりしました。感覚的に、三徳の半分ぐらいの薄さ？と思えるぐらいでした。肝心の切れ味は普通に切れるには切れますが、皆さんがおっしゃられるようにそんなに良くないですね。とりあえず研ぎなおしたところ、切れ味抜群になりました。１回研げば１～２か月は切れ味を保ってる感じがします。鶏肉や豚肉を粗ミンチにするために良く切るのですが、スッと切れるので切れ味は満足してます。ただ、刃が薄い分本体も軽くなっているので安定感がない気がします。これでかぼちゃを切るのは折れそうで怖いです。まぁ、肉用として利用するには足りていますが、使った感じの安定感がないので★３としました。

軽くて切れ味が良い。2回目の購入ですが、年寄の母にには軽くて好評です。

全てに置いて、バッチリです。職人さんが良く使われるようですが、別に主婦にも末永く使われる包丁です。大事にしようと思える包丁です!
