Great for baking
I use xylitol to reduce the sugar in my baked goods - I usually use about 1/3-1/2 of the sugar it calls for with actual sugar, and the rest the recipe calls for I add as xylitol. This works in everything I've tried - muffins, brownies, cakes, bars, custards, caramels, sauces, cookies, pies, etc etc. I bake a lot, it's one of my bigger stress relieving hobbies, but we can't be eating all that sugar every day. This is a great way to satisfy my baking need without killing everyone. It does not raise blood sugar, it's easy on the digestion (if you have IBS like me, you may notice some additional bloating/gas for the first few weeks if you eat some each day, and then your body can adjust to it - same as almost any other dietary change for those of us with IBS), and has far fewer calories than sugar. It behaves the same as sugar in basically all uses, and it does caramelize the same as sugar (unlike most other sugar substitutes). It also does not have the "cooling" sensation that erythritol has.

Good for baking and teeth
This really tastes good in baked goods. I even make cinnamon buns with it. I also put it on my teeth to encourage good bacteria growth and saliva when I’m sleeping.

Great for an occasional use.
I needed a sugar alternative confectioners sugar for a sugar-free ice cream recipe. Due to a car accident, (TBI patient) I am on a super low carb diet. This allowed me to have a rare dessert that was such a nice treat. I just used my Vitamix / and or blender, to turn the sugar into a confectioners powdered sugar. I always use this company if they have the product I need. I have never been disappointed by Anthony's. Will continue to use their products. I highly recommend them for whatever it is you need.

Solution to Keeping My Sweetooth Under Control
I am trying to avoid refined sugar in my diet; however, there are times when I like a little sweetener in my tea and coffee, but I don't want the blood sugar spike that accompanies refined sugar, honey, and even agave. The texture of this brand of Xylitol is grainier than table sugar, which is no big deal because it dissolves easily, and I don't get that gross sugary coating on my teeth or mouth like with refined sugar. The taste is more mild than refined sugar (not sickeningly sweet), but it sweetens enough to satisfy my sweetooth. I am amazed that it comes from birch bark. The calorie count is only 10 per tsp verses 50 for regular sugar. I have not tried other brands of Xylitol, but this Anthony's brand is a win for me. I even had a package sent to my daughter who also has a sweetooth and is cutting down on refined sugar. Yes, it's definitely costlier than table sugar, but since I use it sparingly, I am okay with paying that price; I'm sure the process of converting it from tree bark is more complicated than from sugar cane. Besides, the less sugar I ingest, the less I crave it.Try it! I think you'll like it.

Tastes good, good for your bones & teeth but wait there's more!
The taste is comparable to regular sugar. But PLEASE don't make the same mistake that I did in thinking it had the benefits without consequences. Nothing in life comes free my friends! I made my coffee this morning and added a few teaspoons of this and went on my merry way. Later, I went to get a coffee refill and put another teaspoon to my not quite empty cup.About an hour or so later...my stomach is making some weird noises to the point I wasn't sure if it was coming from me or not. I'm working from the office but our bathroom is all the way down a very long hall. I sat there, contemplating my life choices. (Because I wasn't sure if I would make it there or not.) After a brief internal discussion & begging with my tummy and sphincter that if they helped me out I would find a way to be better to them, I made the most awkward speed walk to the facilities. I made it, thank you sweet baby Jesus! Some warnings:- this is best in very small doses, so you don't think you're going to die. I kno everywhere you read says it's a 1:1 ratio but whoever came up with that is lying and secretly plotting your death by embarrassment. I would start with less than half to say how your stomach handles it.(If it jacks you up, try Stevia. I've been using stevia for months and never had THIS issue)- I wouldn't say it was painful, but definitely paranoid from the noise and the risk of not making it.- strongly recommend being near a bathroom the first few times u try this, while your body adapts :)- if you have problems "going", put a few teaspoons of this in your coffee and it'll clean you right out!Sweetens the coffee just fine. I bought it because I read it's good for your teeth & bones. A little pricey but considering the health benefits, it's worth it I guess. I bought the bag so I'm going to use it. I'll be more careful going forward.I may or may not bake cakes and cookies for people on my $#it list....

No artificial junk.
I was so glad to find this product because it doesn't have erythritol or any other artificial sweetners. There is growing evidence that erythritol may cause early heart attack and stroke. This very sweet so a little goes a long way.
