Yes, you absolutely can use a single glass bowl. This is what i use and it's available on Amazon: Pyrex Storage 7-Cup Round Dish with Dark Blue Plastic Cover, Clear. It fits this machine perfectly.I make one liter / quart batches of yogurt in this bowl (uncovered) and then strain it using #4 cone coffee filters in coffee filter holders.With two #4 filter cones you can strain all of that batch at one time. Spoon the still-warm yogurt into the cone filters and let the the whey strain into whatever appropriate container you have (in the fridge) for about an hour or so. The yield is about 400 ml of thick Greek yogurt and 600 ml of clear whey.While protein powder is often made from whey, whole fresh whey is actually lactose dense and protein poor. All of the nutrients I am interested in are in the yogurt. What you do with the whey is up to you. I pour mine down the drain.

Do you have to heat the milk first

Actually, the reason you heat the milk to scalding temperature is that it denatures the milk proteins and this is more easily assimilated by the culture. Sterilization is the other reason.

Any yogurt machine will work making non-dairy yogurt if you use the right ingredients. Search for an article titled YES YOU CAN MAKE GREAT NON-DAIRY YOGURT AT HOME at ww2.kqed.org. Tapioca flour (also called tapioca starch) can be used for the thickener instead of gelatin. The trick with thickeners is to whisk them separately in a bowl with a small amount of the heated milk until they're dissolved, then keep whisking after you add this slurry to the main pot until the thickener is completely dissolved.

can you make greek with it?

Yes, but understand that Greek yogurt is a style of yogurt that is made by straining regular yogurt to concentrate the solids, thereby creating a thicker yogurt. BTW, I have used plain Greek yogurt as starter in this machine as it was what I had available and it worked perfectly to make a batch of regular yogurt, which I could have strained to create the Greek style, but did not do so as we like it the yogurt as it is.
