Once the hole is punched, are there any sharp edges that would require the use of a grommit if pulling low-voltage (e.g Cat6) cable through?

Yes you would need to use a grommet just like required with romex cable in metal studs. May not be code for Low Voltage wire but you would be taking a big risk of damaging your wire.

Does the tool fold over the "petals" or do you need to do this yourself?

The Tool folds the metal over just enough where nothing can become hung up within the square hole regardless of entry point... Works great for MC Cable
