Can these be used in a wood burning pizza oven

They should be able to. You will want to ensure you are rotating them as a wood burning is a bit more difficult to manage the heat. The pans are rated to 700 degrees empty but with food in them, they will never get that hot so you should be good to go. Make sure you remove the pan from the oven prior to food burning.

I can really use a metal knife to slice the pizza and it won’t scratch the pan?

I have two of the Chicago Style Deep Dish Pizza Pans. I don't think "metal utensil safe" implies that using a metal knife to slice the pizza (downwards into the pan) won't scratch the pan. The coating seems reasonably good, but the most that I would do is stick a metal spatula into it, not slice down with a knife.
