When cold it acts as a thickener. There is a wide range of viscosity in Methylcellulose, which affects the final result of the gel. Mix METIL with cold liquid and rest in the refrigerator until it reaches 4°C/39°F for hydration. It can then be heated to 55°C/131°F to form a hot gel.
