There is so much in this book to learn, experiment that it was an adventure. As a vegetarian, I have found enough recipes- from appetizers such as the spring vegetable folio pilaf to the toasted font black-eyed pea leaf and bean stew to enjoy! Impacted by colonial agro-economics (interesting history in and of itself), the tiny grains of fonio are easy to cook, have fun texture, and thankfully are becoming more popular to order online or buy in International markets. Fonio is easy to grow in dry climate and in poor soil, and still, compares with other super grains in nutrients. The recipes in the book are healthy to boot with nods to Senegalese, French, and Asian cooking.The photography in the book is also wonderful-life, people-a great window to Senegal This is one of the many well written cookbooks with great photography that I have enjoyed thoroughly from the same publisher- lakeIsle press. So go on have a culinary adventure!
