Heavenly Carnitas
Quick to heat up, no bad smell in the house (a problem I have with Duck Fat). First time to make carnitas and they turned out wonderful. I should have kept them going on the stove top for about 15 minutes then move the pan to the oven for 2 1/2 hours. When they weren’t as crisp as I wanted, I quick fried batches in a spoon of lard…yum. Wonderful results. Parts were like pork jerky!
